Let's start with why vegetables are important.
1. They provide nutrients that your body needs to function properly.
2. May reduce the risk of chronic disease.
3. They have fiber to keep you regular if you know what I mean ;)
4. They can help reduce inflammation. Think joint pain, arthritis, or gastrointestinal disease.
5. They help with digestion.
Okay now that we know a few reasons that we need to be eating at least 3 Cups of vegetables per day, let me show you a few ways to sneak them in.
1. Green Smoothie.
Lately I have been too busy to cook breakfast, so a green smoothie has been my go to for my busy mornings. Try this! Super simple and very tasty!
Kale Berry Smoothie
1 Cup Spinach/Kale
1/2 Cup Frozen Blueberries
1/2 Cup Frozen Strawberries
1/2 Cup Frozen Mango
1 Cup Water or Coconut Milk
*1 TBSP Chia Seeds (If available)
*May Add protein powder if desired. I suggest a berry or banana flavored Protein Powder.
2. Cauliflower rice instead of regular rice.
Any dish that you would normally use rice for, switch to cauliflower rice. Cauliflower rice is awesome because it is only 25 Calories per cup, so you can eat 2 cups and not bat an eye. It adds bulk to your meals to keep you full without being excessive in calories.
3. 1 Cup of Spinach in your scrambled eggs.
This is normally my go to. I simply spray a frying pan with oil, saute spinach, and set it to the side. Then I cook my eggs, and add the spinach back in. Typically I eat this with a side of sweet potatoes that have been cubed and cooked. SO GOOD! Tastes better than it sounds. I promise.
But you don't have to stop with spinach. Try adding onions, pepper, and/or mushrooms to veg up your eggs!
4. Try replacing pasta with spaghetti squash or zucchini noodles.
This is similar to the cauliflower rice hack, except with pasta. My favorite currently is a lemon butter sauce with shrimp and zucchini noodles. Must try! Also if you love spaghetti, try replacing the spaghetti noodles with spaghetti squash.
5. Sneak them into soups and casseroles.
Winter is the perfect time for a homemade vegetable soup! Get your Pinterest on and find a recipe :) Casseroles tend to be on the heavier side, but you could try a cauliflower rice, broccoli , cheese, and chicken casserole! I would try to go easy on the cheese and milk, but this would be great for a family dinner. Again, Pinterest for all of your recipe needs!

P.S. One last way to eat more vegetables, is to make it a game. I feel like I am winning when I drink a green smoothie, or eat a salad. Change your mindset from dreading eating vegetables, to eating as many vegetables as possible because you know it is good for you.
